Salad of smoked salmon
Ingredients:
- 4 slices of smoked salmon
- 200 g (1 bunch) rocket
- 10g ( 5 ) capers
- 20 g (1/4) spanish onion
- 50 g cucumber yogurt
- 1 potato roesti
- 10 ml Olive oil
- 5 ml lemon juice
- salt & pepper
Potato Roesti:
Grate 1 potato & squeeze excess liquid out of the potato.
In a bowl mix the potato with salt, pepper & oil to coat.
Form small pancakes, using an egg ring as a mould, with the potato mix.
Fry the pancake / roesti to a golden brown.
Cucumber Yogurt:
Deseed a telegraph cucumber, and then dice fine. Mix yogurt with diced cucumber, garlic, lemon juice, salt & pepper.
To Serve:
Gently rip the smoked salmon on to rocket, add capers, sliced Spanish onions and fold gently.
Place potato roesti on a plate, gently stack smoked salmon mix on top, trying to get height.
Drizzle the salad with cucumber yogurt & olive oil.

Warm Salad of Duck
Ingredients:
- 1 Peking duck breast
- 1 bunch rocket (200g)
- ½ bunch coriander
- ½ bunch chervil
- ¼ Paw Paw
- ½ pear
- 100 ml sweet soy
Pear: cut into 4 wedges
Duck: Season duck breast with salt & pepper, fry in the pan until medium rare ( 3 min on one side 2 min on the other side). Then shred when cool.
Paw Paw: dice.
To Serve:
Place pear ¼ on the plate forming a square. In a bowl mix the rocket, paw paw, herbs and duck with sweet soy & gently fold.
Place duck salad in & on top of the pear remembering to get the salad to sit high for better presentation. Drizzle a little sweet soy if needed.
